Blackberry Cinnamon Overnight Oats

INGREDIENTS:

1 can unsweetened coconut milk (13.5 fl. oz.)

1 1/2 cups gluten free rolled oats (only use rolled oats or quick oats, steal cut will be gritty and not good)

1 tbsp maple syrup

1 tsp cinnamon

1/2 cup organic blackberries

Optional toppings:

Almond slivers, hemp hearts, blackberries, vegan dark chocolate chips

 

HOW TO:

  1. Open can of coconut milk, empty into a bowl

  2. Add quick oats to bowl. Them mix together coconut milk and oats

  3. Add cinnamon and maple syrup. Mix together evenly

  4. In a blender (we used a magic bullet) blend blackberries. blend until smooth.

  5. You’ll need 4 containers with lids (we use mason jars). Add 1 tbsp of the black berry to the bottom of the container

  6. Add 1/2 cup coconut oat mixture to the containers

  7. Add toppings

  8. Cover container with lid and put in the fridge for at least 4 hours. Good for up to 3 days.
