Easy Ways to "Sneak" Veggies Into Meals

You don't have to compromise the meals you love when it comes to adding more veggies to your diet. Let's be honest sometimes when making a quick meal veggies are the last thing we think about adding. But they are so important for our over all health, immunity, and energy.

 

Sauce

Purée veggies and add to favorite sauce

This is something we do with our daughter. Adding pureed veggies to her pasta sauce is an easy way to ensure she's getting a good amount of veggies without her realizing she's eating them. Red sauce with spinach or kale, and white sauce with cauliflower.

 

Pastas

Spiral or shop in store

We all know spaghetti squash. But what about spiraling your carrots, beets and/or squash. You know what's so awesome about today's food market. All the new innovate products. One of those being pasta made of veggies like spinach, cauliflower, tomato, carrot, zucchini and more!

 

Baked Goods

Bake veggies into your goodies

This is such an easy way to get more veggies in your diet. Some of our favorite veggies to add to baked goods are zucchini (zucchini bread), spinach (spinach choco muffins), pumpkin puree added to any recipe, carrots (carrot cake/ muffins/ pancakes), sweet potato (sweet pot muffins)!

 

Savory Oatmeal

Make sweet meals savory

It kind of seems weird at first, to make oatmeal savor. Usually I would agree, until you've actually had it. OMG game changer for mornings. Just cook oatmeal plain and add steamed veggies, some tempeh bacon, a little avocado, maybe pickled onions, some tomatoes voila, your meal and it's so good!

 

Smoothies (DUH)

Blend em up

This is probably the most obvious of them all. If you love smoothies or smoothie bowls this one is for you. The best veggies to add to a smoothie are: kale/spinach, cucumber, frozen cauliflower, beets, carrots, pumpkin, and yams!

 

Fun Fries

Root veggie fries

Who doesn't love fries?! Adding more than just potatoes can make your side dish packed with more nutrients and even more delicious! Root veggies are great to roast up; carrots, yams, purple potato, beets, parsnip, rutabaga (really any root veggies work).
